Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 28 oz (800g) canned diced tomatoes
- 1 cup vegetable broth
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- Preserved Lemon & Green Olive Salsa:
- 1/4 cup chopped green olives
- 1/4 cup chopped preserved lemon
- 1 tbsp olive oil
- 1 tbsp chopped fresh cilantro
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened, about 5 minutes.

Stir in smoked paprika, cumin, and chili powder, and cook for an additional 1 minute.

Add canned diced tomatoes, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes to allow flavors to meld together.

Using an immersion blender or countertop blender, blend the soup until smooth and creamy.

In a small bowl, combine chopped green olives, preserved lemon, olive oil, and cilantro to make the salsa.

Ladle the soup into bowls and top with the preserved lemon and green olive salsa. Sprinkle with additional cilantro, if desired.
