  • 2 medium courgettes, thinly sliced

  • Juice of 1 lemon
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the courgette slices and anchovy fillets.

  2. In a small bowl, whisk together the olive oil, lemon juice, parsley, salt, and pepper.

  3. Pour the dressing over the courgettes and anchovies, and toss to combine.
