How To Make Courgette & Anchovy Salad

- 2 medium courgettes, thinly sliced
- 4 anchovy fillets
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions

In a large bowl, combine the courgette slices and anchovy fillets.

In a small bowl, whisk together the olive oil, lemon juice, parsley, salt, and pepper.
