Ingredients

  • 2 large red bell peppers
  • 1 clove of garlic
  • 1/4 cup of mayonnaise
  • 1/4 cup of Greek yogurt
  • 1/4 cup of grated Parmesan cheese
  • 1/2 teaspoon of smoked paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Place the red bell peppers on a baking sheet and roast in the oven for about 20 minutes, or until the skins are blistered and charred.

  3. Remove the peppers from the oven and transfer to a bowl. Cover with a plate or plastic wrap and let them steam for 10 minutes.

  4. Once cooled, remove the skins, stems, and seeds from the peppers. Chop the flesh into small pieces.

  5. In a food processor or blender, combine the chopped peppers, garlic, mayonnaise, Greek yogurt, grated Parmesan cheese, smoked paprika, salt, and black pepper. Blend until smooth and creamy.

  6. Transfer the dip to a serving bowl and refrigerate for at least 1 hour before serving.

  7. Serve with sliced vegetables, crackers, or toasted bread.
