Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves of garlic, minced
  • 8 cups chicken broth
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the chicken thighs with salt and pepper.

  2. Warm the olive oil in a large pot over medium heat. Add the chicken thighs, skin-side down, and cook until golden brown, about 4-5 minutes. Flip and cook for an additional 4-5 minutes. Remove the chicken from the pot and set aside.

  3. In the same pot, add the diced onion, sliced carrots, sliced celery, and minced garlic. Cook until the vegetables are tender, about 5 minutes.

  4. Pour in the chicken broth and add the bay leaf. Bring to a boil, then reduce heat to low and simmer for 30 minutes.

  5. Return the chicken thighs to the pot and continue to simmer for another 20-30 minutes, or until the chicken is cooked through and tender.

  6. Remove the chicken thighs from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.

  7. Season the soup with additional salt and pepper to taste. Remove the bay leaf.

  8. Ladle the soup into bowls and garnish with fresh parsley.

  9. Serve hot and enjoy!
