How To Make Russian Mushroom and Potato Soup

Ingredients
- 1 onion, chopped
- 2 cloves of garlic, minced
- 250g mushrooms, sliced
- 2 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- Chopped fresh parsley, for garnish
Instructions

In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.

Add mushrooms to the pot and cook until they release their moisture and start to brown.

Add diced potatoes, vegetable broth, bay leaf, and dried thyme to the pot. Season with salt and pepper.

Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are tender.

Remove bay leaf from the pot and discard.

Using an immersion blender or regular blender, blend the soup until smooth.

Bring the soup back to a simmer and adjust seasoning if needed.
