How To Make Red Bell Pepper and Cucumber Gazpacho Recipe
A refreshing and flavorful chilled Spanish soup made with red bell peppers, cucumber, and other fresh ingredients.
Serves:
Ingredients
- 3 red bell peppers, seeded and chopped
- 1 large cucumber, peeled and chopped
- 1 small red onion, chopped
- 2 cloves of garlic, chopped
- 3 tbsp of olive oil
- 3 tbsp of red wine vinegar
- 2 cups of tomato juice
- 1 tsp of salt
- ¼ tsp of black pepper
- 2 tbsp of fresh basil leaves
Instructions

In a blender, add the chopped red bell peppers, cucumber, red onion, garlic, olive oil, red wine vinegar, salt, and black pepper.

Puree the ingredients on high speed until smooth.

Add in the tomato juice and blend again until combined.

Chill the soup in the refrigerator for at least an hour before serving.

When ready to serve, garnish the soup with fresh basil leaves.
