Ingredients

  • 1 can (15 oz) of white beans, drained and rinsed
  • 1/2 cup of roasted red peppers
  • 2 cloves of garlic, minced
  • 1 tbsp of lemon juice
  • 2 tbsp of olive oil
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 2 tbsp of fresh parsley, chopped

Instructions

  1. In a food processor, blend white beans, roasted red peppers, garlic, lemon juice, olive oil, salt, and pepper until smooth.

  2. Transfer dip to a serving bowl and sprinkle with fresh parsley.

  3. Serve with pita chips or vegetables.
