Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.

  2. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until the vegetables are softened.

  3. Stir in the diced tomatoes, kidney beans, chili powder, cumin, paprika, salt, and black pepper. Bring to a simmer.

  4. Reduce heat to low and let the chili simmer for at least 1 hour, stirring occasionally.

  5. Serve hot with optional toppings if desired.
