  • 2largeavocados,diced
  • 1largetomato,diced
  • 1onion,medium, diced
  • ¼cupfresh cilantro,chopped
  • 2earsfresh corn
  • 1lime
  • ½cupolive oil
  • 3tbspwhite vinegar
  • 1tbspcumin,ground
  • ½tbspsalt
  • ¼tbspblack pepper,ground

Instructions

  1. Combine avocados, tomato, onion, and cilantro in a large bowl. Cut corn kernels from the cobs and add to the same bowl.

  2. Cut the lime and squeeze juice into the salsa mixture; add olive oil, vinegar, cumin, salt, and pepper. Mix well.
