Purple hull peas simmered until flavorful are a classic Southern side dish. They are also cooked with okra and bacon bits.

Ingredients

  • lb frozen purple hull peas
  • 8 oz fresh okra, optional
  • 4 oz bacon, cut into ½ inch pieces
  • 1 tbsp white sugar
  • tsp baking soda
  • salt, to taste
  • pepper, to taste

Instructions

  1. Place the purple hull peas into a large pot and cover with water. Bring to a boil over high heat, add okra if using and boil for 2 minutes, stirring twice.

  2. Reduce heat to medium-low, add the bacon, sugar, baking soda, salt, and pepper. Cover and simmer until tender for 1½ to 2 hours.
