Ingredients

  • 8 rice paper wrappers
  • 2 cups mixed salad greens
  • 1 small cucumber, julienned
  • 1 medium carrot, julienned
  • 1 red bell pepper, julienned
  • 1 avocado, sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup peanuts, chopped
  • 1/4 cup hoisin sauce

Instructions

  1. Fill a large bowl with warm water. Dip rice paper wrappers one at a time for 10 seconds until softened.

  2. On each wrapper, place a handful of salad greens, cucumber, carrot, bell pepper, avocado, mint, cilantro, and chopped peanuts.

  3. Fold the sides towards the center, then roll tightly to seal.

  4. Serve with hoisin sauce for dipping.
