Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 small zucchini, sliced
  • 1 small yellow squash, sliced
  • 1 red bell pepper, diced
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese
  • Salt and pepper, to taste
  • Fresh herbs, chopped (optional)

Instructions

  1. Preheat oven to 375°F.

  2. Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened.

  3. Add zucchini, yellow squash, and bell pepper and cook until tender.

  4. In a separate bowl, whisk eggs, milk, cheese, salt, and pepper.

  5. Pour egg mixture over vegetables in skillet.

  6. Cook for a few minutes until the edges start to set.

  7. Transfer skillet to the oven and bake for 15-20 minutes, until frittata is set and lightly golden.

  8. Garnish with fresh herbs, if desired.
