A hearty and healthy frittata packed with fresh summer vegetables.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 small zucchini, sliced
- 1 small yellow squash, sliced
- 1 red bell pepper, diced
- 6 large eggs
- 1/2 cup milk
- 1/2 cup shredded cheese
- Salt and pepper, to taste
- Fresh herbs, chopped (optional)
Instructions

Preheat oven to 375°F.

Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened.

Add zucchini, yellow squash, and bell pepper and cook until tender.

In a separate bowl, whisk eggs, milk, cheese, salt, and pepper.

Pour egg mixture over vegetables in skillet.

Cook for a few minutes until the edges start to set.

Transfer skillet to the oven and bake for 15-20 minutes, until frittata is set and lightly golden.

Garnish with fresh herbs, if desired.
