  • 1 pie crust
  • 1 zucchini, sliced
  • 1 red pepper, sliced
  • 1 onion, diced
  • 1 cup of spinach
  • 4 eggs
  • 1/2 cup of milk
  • 1/4 cup of parmesan cheese
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 1 tsp of paprika

Instructions

  1. Preheat the oven to 375°F.

  2. Roll out the pie crust and place it in a 9-inch pie dish.

  3. In a large skillet, sauté the zucchini, red pepper, and onion until tender.

  4. Add the spinach and cook until wilted.

  5. Spread the vegetables evenly over the crust.

  6. In a separate bowl, whisk together the eggs, milk, parmesan cheese, salt, pepper, and paprika.

  7. Pour the egg mixture over the vegetables, making sure they are completely covered.

  8. Bake in the oven for 45 minutes or until golden brown on top.

  9. Let the quiche cool for a few minutes before serving.
