How To Make Summer Vegetable Tart Recipe

Ingredients

  • 1 pre-made pie crust
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1/2 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1/4 cup grated parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. Place the pie crust in a 9-inch tart pan.

  3. In a bowl, toss the zucchini, yellow squash, red bell pepper, and red onion with olive oil, thyme, salt and pepper.

  4. Arrange the vegetables in the tart crust and sprinkle parmesan cheese on top.

  5. Bake for 40 minutes or until golden brown.

  6. Let cool for 5 minutes before serving.
