How To Make Rice Paper Rolls

Ingredients
- 8 round rice paper wrappers
- 1 cup of cooked rice noodles
- 1 carrot, julienned
- 1 cucumber, julienned
- 1 red bell pepper, thinly sliced
- 1 avocado, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh basil leaves
- 1/2 cup cooked shrimp, deveined and peeled (optional)
- 1/2 cup cooked chicken, shredded (optional)
Instructions

Fill a large bowl with warm water. Dip one rice paper wrapper into the water, making sure to completely submerge it for a few seconds until it becomes soft and pliable.

Place the softened rice paper wrapper on a clean, damp kitchen towel or a plate.

In the center of the wrapper, layer a small amount of rice noodles, followed by a few pieces of carrot, cucumber, red bell pepper, avocado, herbs, and protein if using.

Fold the bottom edge of the wrapper over the filling, then fold in the sides. Roll tightly, similar to a burrito, until fully sealed.

Repeat with the remaining rice paper wrappers and ingredients.

Serve the rice paper rolls with your choice of dipping sauce, such as peanut sauce or sweet chili sauce.
