How To Make Toulouse Sausage Cassoulet

Ingredients
- 4 Toulouse sausages
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves of garlic, minced
- 2 sprigs of thyme
- 2 bay leaves
- 1 can (14 oz) of diced tomatoes
- 2 cans (15 oz each) of white beans, drained and rinsed
- 1 cup chicken broth
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions

Heat a large Dutch oven over medium heat. Add the Toulouse sausages and cook until browned on all sides. Remove from the pot and set aside.

In the same pot, add the diced onion, carrots, and celery. Cook until the vegetables have softened, about 5 minutes.

Add the minced garlic, thyme sprigs, and bay leaves. Cook for another 2 minutes.

Return the browned sausages to the pot. Add the diced tomatoes, white beans, and chicken broth. Season with salt and pepper.

Bring the mixture to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, or until the sausages are cooked through and the flavors have melded together.

Remove the thyme sprigs and bay leaves from the pot. Taste and adjust seasoning if needed.

Serve the Toulouse sausage cassoulet hot, garnished with chopped parsley.
