Ingredients

  • 2 lbs pork loin roast
  • 2 apples, cored and sliced
  • 1/4 cup cider vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. Season the pork loin roast with salt and pepper.

  3. Heat the olive oil in a large skillet over medium-high heat. Add the pork roast and sear it on all sides until browned.

  4. Transfer the seared roast to a roasting pan.

  5. In the same skillet, add the apples, cider vinegar, garlic, and rosemary. Cook for 5 minutes until the apples are slightly softened.

  6. Pour the apple mixture over the pork roast in the roasting pan.

  7. Cover the roasting pan with aluminum foil and place it in the preheated oven.

  8. Roast the pork for 1 hour, then remove the foil and continue roasting for an additional 30 minutes, or until the internal temperature reaches 145°F (63°C).

  9. Remove the roast from the oven and let it rest for 10 minutes.

  10. Slice the pork and serve with the roasted apples and pan juices.
