How To Make Bourbon-Glazed Pork Belly Chunks

Ingredients
- 1.5 lbs of pork belly, cut into chunks
- 1/2 cup of bourbon
- 1/4 cup of brown sugar
- 2 tablespoons of soy sauce
- 2 tablespoons of dijon mustard
- 2 cloves of garlic, minced
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of salt
- 2 green onions, thinly sliced (for garnish)
Instructions

Preheat your oven to 325°F (163°C).

In a large bowl, combine the bourbon, brown sugar, soy sauce, dijon mustard, minced garlic, smoked paprika, black pepper, and salt.

Place the pork belly chunks in the bowl and mix well until they are coated with the marinade.

Heat a cast-iron skillet or oven-safe pan over medium-high heat. Add the pork belly chunks, reserving the marinade.

Cook the pork belly chunks for 3-4 minutes on each side, until they are golden brown and caramelized.

Remove the pork belly from the skillet and set aside.

Pour the reserved marinade into the skillet and bring it to a boil. Cook for 2-3 minutes, until the sauce thickens slightly.

Return the pork belly chunks to the skillet, making sure they are coated with the thickened sauce.

Transfer the skillet to the preheated oven and bake for 1.5-2 hours, until the pork belly is tender and the sauce has caramelized.

Remove from the oven and let it rest for a few minutes.

Garnish with thinly sliced green onions before serving.
