How To Make Mushroom and Spinach Quesadillas

A cheesy and flavorful quesadilla filled with sautéed mushrooms and spinach.

Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • 8 small flour tortillas
  • 2 cups of sliced mushrooms
  • 2 cups of fresh spinach
  • 1 cup of shredded cheddar cheese
  • 1/4 cup of diced onions
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Sauté onions until soft.
  3. Add mushrooms to the pan and cook for 5 minutes.
  4. Add spinach and cook for another 1-2 minutes, or until wilted.
  5. Season with salt and pepper to taste.
  6. Divide mushroom and spinach mixture among 4 tortillas.
  7. Top each with a handful of shredded cheddar cheese.
  8. Top with another tortilla.
  9. Heat a non-stick pan over medium heat.
  10. Cook each quesadilla for 2-3 minutes on each side until cheese is melted and tortillas are crispy.
  11. Serve hot.
