How To Make Oyster Mushroom and Spinach Salad

A refreshing salad packed with nutritious oyster mushroom and spinach, perfect for a light meal or appetizer.

Ingredients

  • 8 oz. oyster mushrooms, sliced
  • 4 cups baby spinach leaves
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup walnuts, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a pan and sauté the oyster mushrooms for 5-6 minutes until tender.

  2. In a large bowl, mix spinach leaves, red onion, cherry tomatoes, and walnuts.

  3. Add the sautéed oyster mushrooms to the bowl.

  4. Drizzle the salad with balsamic vinegar and olive oil.

  5. Season with salt and pepper, to taste.

  6. Toss well and serve.
