  • 8 oz fresh morel mushrooms
  • 6 cups fresh baby spinach
  • 1 small shallot, thinly sliced

  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions

  1. Clean and slice the morel mushrooms. Heat a large skillet over medium-high heat and add the mushrooms. Cook for 5-7 minutes until tender.

  2. In a large bowl, combine the cooked morels, baby spinach, and sliced shallot.

  3. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined.
