Ingredients

  • 1 baguette, sliced into ½ inch rounds
  • 1/4 cup olive oil
  • 8 oz mushrooms, sliced
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1/4 cup white wine
  • 4 oz blue cheese, crumbled

Instructions

  1. Preheat oven to 375°F.

  2. Place baguette slices on a baking sheet and brush with olive oil.

  3. Bake for 8-10 minutes until golden brown and crispy.

  4. In a large skillet over medium heat, add olive oil, mushrooms, shallot, and garlic. Cook for 5-7 minutes until softened.

  5. Pour in white wine and cook until the liquid has reduced by half.

  6. Spread the mushroom mixture onto the crostini and top with crumbled blue cheese.

  7. Return to the oven for 5-7 minutes or until the cheese is melted.

  8. Serve hot.
