How To Make Mushroom and Spinach Stroganoff

A creamy vegetarian pasta dish with hearty mushrooms and spinach in every bite.

Serves:

Ingredients

  • 12 oz of pasta
  • 2 tbsp of butter
  • 1 small onion, diced
  • 3 cloves of garlic, minced
  • 8 oz of sliced mushrooms
  • 2 cups of fresh spinach
  • 2 tbsp of flour
  • 1 cup of vegetable broth
  • 1/2 cup of sour cream
  • Salt and pepper to taste
  • Fresh parsley to garnish

Instructions

  1. Cook pasta according to package instructions.
  2. In a large pan, melt butter over medium heat. Add onions and garlic, sauté for 2 minutes.
  3. Add mushrooms and spinach, cook until mushrooms release their liquid and spinach is wilted.
  4. Sprinkle flour over veggie mixture and stir to combine.
  5. Pour in vegetable broth slowly while whisking to prevent lumps from forming.
  6. Reduce heat to low and stir in sour cream. Season with salt and pepper to taste.
  7. Serve over cooked pasta and garnish with fresh parsley.
