A delicious and easy to make appetizer loaded with savory baby bella mushrooms and creamy brie cheese.

Ingredients

  • 1 French baguette, cut into slices
  • 2 tbsp olive oil
  • 8 oz Baby Bella mushrooms, sliced
  • 1 garlic clove, minced
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper
  • 4 oz brie cheese, sliced
  • Fresh parsley, chopped

Instructions

  1. Preheat the oven to 350°F.

  2. Arrange the baguette slices on a baking sheet, and brush with olive oil.

  3. Bake the crostini for 10-12 minutes, until crispy and lightly browned.

  4. Meanwhile, in a pan, heat the remaining 1 tbsp of olive oil over medium-high heat.

  5. Add the mushrooms, garlic, and rosemary, and cook until the mushrooms are tender, about 5-7 minutes.

  6. Season with salt and pepper to taste.

  7. Once the crostini are ready, top each slice with a slice of brie cheese.

  8. Spoon the mushroom mixture over the cheese.

  9. Place the crostini back into the oven and broil for 1-2 minutes, until the cheese is melted and bubbly.

  10. Garnish with fresh parsley and serve warm.
