A delicious and elegant appetizer featuring sautéed morel mushrooms and melted brie cheese on crispy crostini.

Ingredients

  • 8 slices of baguette
  • 2 tbsp olive oil, divided
  • 1 shallot, finely chopped
  • 1 cup fresh morel mushrooms, chopped
  • Salt and pepper
  • 4 oz brie cheese, sliced
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat oven to 375°F. Cut baguette into 1/2 inch slices and brush with 1 tablespoon of olive oil. Place on a baking sheet and bake for 5-7 minutes until crisp.

  2. Meanwhile, heat remaining olive oil in a skillet over medium heat. Add shallot and sauté until softened. Add chopped mushrooms and sauté until tender. Season with salt and pepper.

  3. Once baguette slices are crisp, top each with a slice of brie cheese and a spoonful of sautéed mushrooms. Return to oven and cook for 2-3 minutes until cheese is melted.

  4. Garnish with fresh thyme leaves and serve.
