How To Make Enoki Mushroom Sushi Recipe

A delicious sushi recipe using enoki mushrooms as the star ingredient.

Serves:

Ingredients

  • 1 pack of enoki mushrooms
  • 2 cups of sushi rice
  • 2 tbsp of rice vinegar
  • 1 tbsp of sugar
  • 1 tsp of salt
  • 4 sheets of nori
  • Soy sauce and wasabi for serving

Instructions

  1. Rinse the sushi rice and cook it in a rice cooker or on the stove.

  2. In a small pot, mix the rice vinegar, sugar, and salt. Heat until the sugar dissolves.

  3. Once the rice is cooked, transfer it to a large bowl and add the vinegar mixture. Mix well.

  4. Wash the enoki mushrooms and separate them into small bunches.

  5. Place a nori sheet on a bamboo sushi mat.

  6. Add a thin layer of rice and spread it evenly on top of the nori.

  7. Place the enoki mushrooms on top of the rice.

  8. Roll the sushi tightly and cut into bite-sized pieces.

  9. Serve with soy sauce and wasabi.
