Ingredients
- 8 oz enoki mushrooms, roots removed and rinsed
- 8 large eggs
- 1/2 cup of milk
- 1/4 cup shredded cheddar cheese
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions

Preheat a large non-stick skillet over medium heat.

Add olive oil and enoki mushrooms, and sauté for 3-4 minutes until mushrooms are tender.

In a medium bowl, whisk together eggs, milk, cheese, salt, and black pepper.

Pour the egg mixture over the sautéed mushrooms and cook for 5-6 minutes until the omelette is cooked through.

Carefully slide the omelette onto a serving plate and serve hot.
