How To Make Mongolian Eggplant Recipe

Ingredients
- 2 long Chinese eggplants, cut into bite-sized pieces
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1 red chili, minced
- 1 tbsp hoisin sauce
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- Salt and pepper to taste
- Chopped scallions for garnish
Instructions

Heat vegetable oil in a pan over medium heat.

Add eggplants and stir-fry for 5-6 minutes, until softened.

Add garlic, ginger, and chili, and cook for another 2 minutes.

Add hoisin sauce, soy sauce, rice vinegar, salt, and pepper.

Stir-fry for another 2-3 minutes, until everything is well combined.

Top with chopped scallions and serve hot with rice.
