Ingredients

  • 4 haddock fillets
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup beer
  • 1/4 cup pesto sauce
  • 4 tortilla wraps
  • 1 cup shredded lettuce
  • 1 tomato, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, combine the flour, baking powder, salt, and black pepper.

  3. Slowly pour in the beer and whisk until smooth.

  4. Dip the haddock fillets into the batter, ensuring they are fully coated.

  5. Heat oil in a deep pan over medium-high heat.

  6. Fry the battered haddock fillets for 3-4 minutes on each side or until golden brown and crispy.

  7. Place the fried haddock fillets on a baking sheet and bake in the preheated oven for 5 minutes to ensure they are cooked through.

  8. Spread pesto sauce on each tortilla wrap.

  9. Place a fried haddock fillet, shredded lettuce, and sliced tomato on each wrap.

  10. Wrap tightly and secure with toothpicks if needed.

  11. Serve the battered haddock & pesto wraps warm.
