How To Make Marinated Aubergine & Rocket Salad

Ingredients
- 2 medium aubergines, sliced into rounds
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 2 garlic cloves, minced
- Salt and pepper, to taste
- 4 cups rocket leaves
- 1/2 cup cherry tomatoes, halved
- 1/4 cup pine nuts, toasted
- 1/4 cup grated Parmesan cheese
Instructions

In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and pepper.

Place the sliced aubergines in a shallow dish and pour the marinade over them. Ensure all the slices are coated. Let them marinate for at least 10 minutes.

Heat a grill pan or barbecue grill over medium-high heat. Cook the marinated aubergine slices on both sides until grill marks appear and the slices are tender. This will take about 4-5 minutes per side.

Remove the cooked aubergines from the grill and let them cool slightly.

In a serving bowl, combine the rocket leaves, cherry tomatoes, and toasted pine nuts.

Add the grilled aubergines to the bowl and gently toss to combine.

Sprinkle grated Parmesan cheese over the salad.

Serve the marinated aubergine & rocket salad immediately.
