Ingredients

  • 8 lasagne noodles
  • 1 cup frozen peas, thawed
  • 1/2 lb sausage, casings removed
  • 1/2 cup pesto sauce
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cook the lasagne noodles according to package instructions. Drain and set aside.

  2. In a large skillet, cook the sausage over medium heat until browned and cooked through. Drain any excess fat.

  3. In a medium bowl, mix together the thawed peas, cooked sausage, and pesto sauce. Season with salt and pepper to taste.

  4. In a separate bowl, mix together the ricotta, mozzarella, and Parmesan cheeses.

  5. In a 9×13-inch baking dish, spread a layer of the sausage and pea mixture on the bottom. Top with a layer of lasagne noodles. Spread a layer of the cheese mixture on top. Repeat the layers, finishing with a layer of cheese on top.

  6. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  7. Remove from the oven and let it cool for a few minutes before serving.
