How To Make Two Bean, Potato & Tuna Salad

Ingredients
- 1 cup green beans, trimmed and halved
- 1 cup kidney beans, rinsed and drained
- 2 cups baby potatoes, halved
- 1 can tuna, drained
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- for the dressing:
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- salt and pepper to taste
Instructions

Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until crisp-tender. Drain and rinse under cold water.

In the same pot, boil the potatoes until fork-tender. Drain and let cool slightly before cutting into bite-sized pieces.

In a large bowl, combine the green beans, kidney beans, potatoes, tuna, red onion, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper. Pour the dressing over the salad and toss to coat evenly.

Serve the salad chilled or at room temperature.
