How To Make Onion Bhaji Fish & Chips

  • 2 large onions, thinly sliced
  • 1 cup gram flour
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt, to taste
  • Water, as needed
  • Vegetable oil, for frying
  • 4 white fish fillets (such as cod or haddock)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • Salt, to taste
  • 1 cup cold sparkling water
  • 4 large potatoes, peeled and cut into chips
  • Salt, to taste
  • 1/2 tsp paprika
  • Lemon wedges, for serving
  • Tartar sauce, for serving

Instructions

  1. In a large bowl, combine the sliced onions, gram flour, cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well.

  2. Gradually add water to the onion mixture, stirring continuously, until a thick batter consistency is achieved.

  3. In a deep pan, heat vegetable oil for frying.

  4. Drop spoonfuls of the onion batter into the hot oil and fry until golden brown and crispy. Remove the bhajis from the oil and place them on a paper towel-lined plate to drain excess oil.

  5. In a separate bowl, combine all-purpose flour, baking powder, and salt. Gradually add cold sparkling water and whisk until you have a smooth batter.

  6. Dip the fish fillets into the batter, ensuring they are fully coated. Carefully place the battered fish into the hot oil and fry until golden brown and cooked through. Remove the fish from the oil and drain on a paper towel-lined plate.

  7. Preheat the oven to 200°C (400°F).

  8. Toss the potato chips with salt and paprika. Place them on a baking sheet and bake for 20-25 minutes, or until crispy and golden brown.

  9. Serve the onion bhajis, fish fillets, and chips together on a platter. Serve with lemon wedges and tartar sauce on the side.
