How To Make Smoked Haddock Salad with Poached Eggs & Croûtons

Ingredients
- 4 smoked haddock fillets
- 4 eggs
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced red onion
- 1/4 cup capers
- 1/4 cup chopped fresh dill
- 4 slices crusty bread, cubed
- 2 tablespoons olive oil
- Salt and pepper to taste

Preheat your oven to 400°F (200°C). Place the smoked haddock fillets on a baking sheet and bake for 10-12 minutes, or until cooked through.

Meanwhile, bring a pot of water to a gentle simmer. Crack each egg into a separate small bowl or ramekin. Carefully slide each egg into the simmering water and poach for 3-4 minutes, until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.

In a large salad bowl, combine the mixed salad greens, cherry tomatoes, red onion, capers, and fresh dill. Toss to combine.

In a separate skillet, heat the olive oil over medium heat. Add the cubed bread and toast until golden and crispy, about 5-6 minutes. Remove from the heat and set aside.

To assemble the salad, divide the smoked haddock fillets among four plates. Top each with a poached egg. Scatter the salad greens mixture and toasted croûtons around the fish and egg. Season with salt and pepper to taste.
