Ingredients
- 4 medium potatoes, peeled and diced
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 bell peppers, sliced
- 2 carrots, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- Salt and pepper to taste
- Optional: chopped green onions and sesame seeds for garnish
Instructions

Boil the diced potatoes in a pot of salted water for 5 minutes until slightly tender. Drain and set aside.

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the onions, bell peppers, carrots, broccoli, snap peas, garlic, and ginger to the skillet. Stir-fry for 5-6 minutes until the vegetables are crisp-tender.

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, cornstarch, and 1/4 cup water. Pour the mixture over the vegetables and stir to combine.

Add the boiled potatoes to the skillet and stir-fry for an additional 5 minutes until the potatoes are golden and crispy.

Season with salt and pepper to taste.

Serve the veggie stir-fry hot, garnished with chopped green onions and sesame seeds, if desired.
