Ingredients

  • 1 tbsp olive oil, extra virgin
  • ½ lb chuck beef, chopped
  • 1 yellow bell pepper, or red bell pepper, diced
  • 1 green bell pepper
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika
  • 14 oz chickpeas, drained, rinsed
  • 14 oz lentils, drained, rinsed
  • 3 cups bolognese sauce
  • cup water
  • ¼ cup coriander, fresh, chopped, plus extra sprigs to serve
  • salt and pepper, to taste

Instructions

  1. Heat oil in a large, deep frying pan over medium-high heat.
  2. Add the beef and bell peppers. Cook and stir occasionally then season with salt and pepper.
  3. Cook for 35 minutes or until softened and beef is tender.
  4. Add the cumin, coriander, and paprika. Cook and stir for 1 minute or until fragrant.
  5. Add the chickpeas, lentils, bolognese sauce, and water. Cook for 8 to 10 minutes or until heated through, stirring occasionally.
  6. Stir in the coriander and serve!
