Ingredients
- 1.5 pounds of beef stew meat, cubed
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups of beef broth
- 2 cups of chopped cabbage
- 2 medium carrots, sliced
- 2 medium potatoes, diced
- 1 tablespoon of tomato paste
- 1 teaspoon of dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.

In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant.

Return the beef stew meat to the pot and add the beef broth, chopped cabbage, sliced carrots, diced potatoes, tomato paste, dried thyme, bay leaf, salt, and pepper. Stir to combine.

Bring the stew to a boil, then reduce heat to low. Cover and simmer for about 2 hours, or until the beef is tender and the flavors have melded together.

Remove the bay leaf and taste for seasoning, adding more salt and pepper if needed.

Serve the beef and cabbage stew hot, garnished with fresh parsley.
