How To Make Mandazi (African Donuts)

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cinnamon
  • 2 tbsp melted butter
  • 1/2 cup coconut milk
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, salt, cardamom, and cinnamon.

  2. Add the melted butter and coconut milk to the dry ingredients. Mix until the dough comes together.

  3. Knead the dough for about 5 minutes, until it becomes smooth and elastic.

  4. Cover the dough with a clean kitchen towel and let it rest for 10 minutes.

  5. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.

  6. Cut the dough into desired shapes, such as triangles or circles.

  7. Heat vegetable oil in a deep pan or pot to about 350°F (175°C).

  8. Carefully drop a few pieces of the dough into the hot oil and fry until golden brown on both sides.

  9. Remove the mandazi from the oil and drain on a paper towel-lined plate.

  10. Serve warm and enjoy!
