  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, diced onions, chopped cilantro

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess grease.

  2. Add the diced onion, minced garlic, and diced green bell pepper to the pot. Cook for 5 minutes, until vegetables are tender.

  3. Stir in the diced tomatoes, kidney beans, tomato paste, beef broth, chili powder, cumin, paprika, oregano, salt, and pepper.

  4. Bring the chili to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.

  5. Serve hot and garnish with optional toppings if desired.
