How To Make Thai Green Curry Roast Chicken

Ingredients
- 1 whole chicken
- 4 tablespoons Thai green curry paste
- 1 can (13.5 oz) coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon vegetable oil
- Fresh basil leaves, for garnish
- Cooked jasmine rice, for serving
Instructions

Preheat the oven to 400°F (200°C).

Rinse the chicken and pat it dry with paper towels.

In a bowl, mix together the Thai green curry paste, coconut milk, fish sauce, lime juice, brown sugar, salt, and black pepper.

Rub the mixture all over the chicken, making sure to coat it thoroughly.

Heat the vegetable oil in a large oven-safe skillet over medium heat.

Place the chicken in the skillet, breast side up, and cook for about 5 minutes, until browned.

Transfer the skillet to the preheated oven and roast the chicken for 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for 10 minutes before carving.

Garnish with fresh basil leaves and serve with cooked jasmine rice.
