Ingredients

  • 1 lb chicken breast, thinly sliced
  • 4 cups chicken broth
  • 2 stalks lemongrass, bruised
  • 3 kaffir lime leaves
  • 1-inch piece of ginger, sliced
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 1 cup coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish
  • Salt, to taste

Instructions

  1. In a pot, bring the chicken broth to a simmer.

  2. Add lemongrass, kaffir lime leaves, ginger, garlic, and chili. Simmer for 10 minutes.

  3. Add the chicken slices and cook until they are no longer pink.

  4. Stir in coconut milk, fish sauce, and lime juice. Simmer for an additional 5 minutes.

  5. Season with salt to taste.

  6. Remove lemongrass stalks and kaffir lime leaves.

  7. Serve hot, garnished with fresh cilantro.
