Seafood lovers will love this prawn and mussel soup with rice noodles. An easy Chinese noodle soup simmered in a tomato-based broth.

  • 4ozmussels,cleaned and debearded
  • 8ozrice noodles,(½ package), dried
  • 4cupswater
  • 1tomato,diced
  • cuponion,diced
  • 2tbsptomato puree
  • 1tbspSauerkraut
  • 2tspchile oil
  • 1tspgarlic,sliced
  • ½tspsalt
  • 4ozprawns,peeled and deveined
  • 1tbspfresh parsley,chopped


  1. Soak mussels in a bowl of cold salted water for 20 minutes. Drain.

  2. Bring a small pot of water to a boil. Add noodles and simmer until tender for 2 to 3 minutes. Drain and rinse with cold water.

  3. Bring 1 quart of water to a boil in the same pot. Add tomato, onion, tomato puree, sauerkraut, chile oil, garlic, and salt. Simmer until onion softens for about 10 minutes.

  4. Stir in mussels then simmer for 1 minute. Stir in prawns then simmer until opaque for 1 to 2 minutes.

  5. Stir in rice noodles. Garnish with parsley.
