How To Make Copycat Friendly’s Ultimate Grilled Cheese And Tomato Soup

For the Tomato Soup

  • 1 tbsp. canola oil
  • 1/2 onion (medium, diced)
  • 3 stalks celery (diced)
  • 2 tsp. minced garlic
  • 1/2 tsp. red pepper flakes
  • 1 salt
  • 1 black pepper
  • 28 oz. crushed tomatoes
  • 14.5 oz. vegetable broth

For the Grilled Cheese

  • 8 slices whole-wheat bread
  • 4 tbsp. butter
  • 8 slices American cheese
  • 1/2 cup grated cheddar

Tomato Soup

  1. In a medium pot over medium heat, add the canola oil.

  2. Stir in the onions and celery. Sauté until the onions are soft and translucent.

  3. Add the garlic, red pepper flakes, salt, and pepper. Sauté an additional 2 minutes.

  4. Stir in the crushed tomatoes and vegetable broth.
  5. Bring to a boil, then reduce the heat to a simmer. Cook covered for 30 minutes.

  6. Add soup ingredients to a blender and puree until smooth.

  7. Return the puree to the pot and season with salt and pepper.
  8. Serve hot with a grilled cheese sandwich.

Grilled Cheese

  1. Heat a large grill pan over medium-high heat.

  2. Butter one side of each slice of bread.

  3. Lay half of the bread, butter side down, in the pan.
  4. Put a slice of American cheese on each piece of bread, then sprinkle 2 tbsp of cheddar on top of each piece.

  5. Add another slice of American cheese on top of the cheddar and finally cover with the remaining bread slices, butter side up.

  6. Grill until golden brown on both sides and the cheese is melted.

  7. Cut into triangles and serve with the tomato soup.
