- 2 chicken breasts, boneless and skinless
- 4 cups chicken broth
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 cups bok choy, chopped
- 1 carrot, sliced
- 1 red bell pepper, sliced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Green onions for garnish
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger. Cook until fragrant.

Add the chicken breasts to the pot and cook until lightly browned on both sides.

Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for about 15 minutes or until the chicken is cooked through.

Remove the chicken from the pot and shred it using two forks. Set aside.

Add the bok choy, carrot, and red bell pepper to the pot. Cook for another 5 minutes or until the vegetables are tender.
