Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 4 cups beef broth
  • 1 cup water
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 bay leaf
  • 1 cup okra, sliced
  • 1 cup spinach, chopped
  • 1 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

  2. In the same pot, add the chopped onion, minced garlic, and diced bell pepper. Cook for 5 minutes until the vegetables are softened.

  3. Return the beef to the pot and add the sliced carrots, diced potatoes, beef broth, water, salt, black pepper, dried thyme, paprika, cayenne pepper, and bay leaf. Stir well to combine.

  4. Bring the soup to a simmer, then reduce the heat to low and cover. Let it cook for 1.5 to 2 hours, until the beef is tender and the flavors have melded together.

  5. About 10 minutes before serving, add the sliced okra, chopped spinach, and fresh parsley to the pot. Stir well and let it cook until the okra is tender.

  6. Remove the bay leaf before serving. Ladle the soup into bowls and enjoy the authentic flavors of pepper pot soup.
