How To Make Stout Slow Cooker Corned Beef and Veggies

Ingredients

  • 3 lbs corned beef brisket
  • 4 cups beef broth
  • 1 cup stout beer
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 tsp black pepper
  • 1 tsp mustard seeds
  • 1 tsp dried thyme
  • 1 lb baby potatoes, halved
  • 4 carrots, peeled and cut into chunks
  • 1 cabbage, cut into wedges

Instructions

  1. Place the corned beef brisket in a slow cooker.

  2. Add the beef broth, stout beer, onion, garlic, black pepper, mustard seeds, and dried thyme.

  3. Cook on low heat for 6 hours.

  4. Add the potatoes, carrots, and cabbage to the slow cooker.

  5. Cook on low heat for an additional 2 hours or until the vegetables are tender.

  6. Remove the corned beef and vegetables from the slow cooker.

  7. Let the corned beef rest for 10 minutes before slicing.

  8. Serve the sliced corned beef and vegetables hot.
