How To Make Slow Cooked Corned Beef for Sandwiches

Ingredients
- 2 pounds corned beef
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon mustard seeds
- 1 teaspoon black peppercorns
- 4 slices rye bread
- 4 tablespoons Dijon mustard
- 4 slices Swiss cheese
- 4 tablespoons sauerkraut
Instructions

Place the corned beef in a slow cooker. Add the sliced onion, minced garlic, beef broth, mustard seeds, and black peppercorns. Cover and cook on low heat for 8 hours or until the beef is tender.

Once the beef is cooked, remove it from the slow cooker and let it rest for about 10 minutes. Slice the beef thinly against the grain.

Preheat a skillet over medium heat. Spread 1 tablespoon of Dijon mustard on each slice of rye bread. Place a slice of Swiss cheese on two slices of bread.

Place the sliced corned beef on top of the Swiss cheese. Top with 1 tablespoon of sauerkraut. Close the sandwiches with the remaining slices of bread.

Grill the sandwiches in the preheated skillet until the bread is crispy and the cheese is melted, about 3-4 minutes per side. Serve hot.
