Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1 1/2 cups mochiko (sweet rice flour)
- 1 cup coconut milk
- 1/2 cup sweetened condensed milk
Instructions

Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.

In a large bowl, combine the melted butter and sugar. Mix well.

Add the eggs and vanilla extract to the bowl. Whisk until fully combined.

In a separate bowl, sift together the baking powder and mochiko. Gradually add the dry mixture into the wet mixture, alternating with the coconut milk and sweetened condensed milk. Mix until smooth.

Pour the batter into the prepared baking pan and smooth the top with a spatula.

Bake in the preheated oven for 1 hour, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Remove from the oven and let cool for at least 30 minutes before cutting into squares.
