How To Make Gluten-free Christmas Pudding

  • 1 cup gluten-free breadcrumbs
  • 1 cup gluten-free flour
  • 1 cup mixed dried fruits (such as raisins, currants, and chopped dates)
  • 1/2 cup chopped nuts (such as almonds or walnuts)
  • 1/2 cup grated gluten-free suet
  • 1/2 cup dark brown sugar
  • 1/2 teaspoon mixed spice (such as cinnamon, nutmeg, and allspice)
  • 1/4 teaspoon grated nutmeg
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1/2 cup gluten-free stout beer (such as Guinness)
  • 2 tablespoons gluten-free dark rum
  • 2 large eggs, beaten
  • Gluten-free custard or whipped cream, for serving

Instructions

  1. In a large mixing bowl, combine the gluten-free breadcrumbs, flour, dried fruits, nuts, suet, brown sugar, mixed spice, nutmeg, orange zest, and lemon zest. Mix well.

  2. In a separate bowl, whisk together the stout beer, rum, and beaten eggs. Pour the liquid mixture into the dry ingredients and stir until fully combined.

  3. Grease a 1-pint pudding basin and spoon the pudding mixture into it. Smooth the top with a spoon.

  4. Cover the pudding basin with a double layer of greaseproof paper or aluminum foil, making sure to fold a pleat in the center for expansion. Secure the cover with kitchen twine.

  5. Place the pudding basin in a large pot or slow cooker filled with boiling water, ensuring the water comes halfway up the sides of the basin. Cover the pot or slow cooker and steam the pudding over low heat for 4 hours.

  6. After 4 hours, carefully remove the pudding basin from the pot or slow cooker and let it cool for a few minutes. Remove the cover and invert the pudding onto a serving plate.

  7. Serve the gluten-free Christmas pudding warm with gluten-free custard or whipped cream.
