How To Make Lamb Tagine with Dates & Sweet Potatoes

Ingredients
- 2 lbs lamb stew meat, cut into chunks
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1 cup pitted dates
- 2 medium sweet potatoes, peeled and cubed
- 2 cups chicken broth
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.

In the same pot, add the onion and garlic. Sauté until onion is translucent and fragrant.

Return the lamb to the pot and add the cumin, coriander, cinnamon, ginger, turmeric, and cayenne pepper. Stir to coat the lamb with the spices.

Add the dates, sweet potatoes, and chicken broth to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.

Season with salt and pepper to taste.

Serve the lamb tagine over couscous or rice, garnished with fresh cilantro.
